I was so happy to do this wonderful cake last weekend for a friend of mine. She gave me freedom to create a cake that was unique to her and not just taken from another design. We designed it around her dress and theme. She wore this beautiful old lace dress, the tables were decorated with heirloom crocheted doilies and vases with buttons on them. So we incorporated both of those into the cake. It turned out beautiful that day and I'm so happy for them!

Jennifer found these amazing edible vintage buttons and she made the bird topper herself!

The layers were flavored white, strawberry, and chocolate hazelnut, with a vanilla almond butter cream icing. Thank you Jennifer I had so much fun making this for y'all!

Mississippi Magazine!

This was such a cool thing for me! My boss had her shop featured in an article on bakeries here in Mississippi. I first saw the article and was bummed that nothing I had made was in there. While coming back home from a long drive to Mobile I stopped at the book store to pick up a book for my mom. While standing at the check out line I picked up the magazine to pass the time. When I opened it up I was blown away by the picture on the Features page. It was my dessert!

I created the recipe and made the whole thing! I just smiled from ear to ear! It's not something you have happen all the time. I would have posted it earlier, but I have been having trouble getting my pictures to post so I'm a little behind. Anyway I had to share this photo, because it is a great accomplishment for me!

Cowboy cake

My mom's farm now hosts birthday parties, so we made a cake to display in an ad for the Oxford Invitation Magazine. It is one of my favorites that we have ever made. I had so much fun making the top look like a bandanna. I stayed up till Midnight the night before working on it; which, is not a good idea but I had to. And I'm so glad I did. This just turned out perfect! I can't wait to see the final ad in the magazine when it comes out.

I started a new job this month at this wonderful little shop in Oxford, Mississippi. It's called Lusa pastry cafe. It's run by the sweetest couple from Portugal. If I had my own shop it would look a lot like what they have. I have been making a few pastries for them and next week I'm going to start making lunch as well. We will have a different menu each couple months, so that our food can be seasonal. The items we will serve are going to be more like the south and what you find if you went to your Mamaws for a Sunday dinner. So far Tuesday will be pasta day and Saturday is Cajun day. Beyond that we are still deciding. So if you are near by you have to stop in and enjoy some wonderful food! Oh and the Hot Chocolate is amazing!

My sister made this awesome cake for her son's 8Th birthday and let me help with some of the decorations for it! We had so much fun reminiscing of playing this game growing up! And singing the famous song! Jamie it looked amazing and tasted just as wonderful!

She let her son pick the flavor which was interesting but actually worked! It was a chocolate blueberry cake! Yes I said blue berry with chocolate! She used a red velvet cake and mixed in blue berries and used a cream cheese filling and frosting! Nice combination!
I made the mushroom men, the rock edging, and the clouds. Then helped make the hat for Mario which was a collaboration between mom and Jamie. But the rest was all Jamie! How cool is that man eating plant!

I loved working on this, Thank you Jamie!

Hoggard-Doggett Wedding!

I had the opportunity to work on a wedding this past week in Oxford Mississippi. I made a 4 tier wedding cake, groom's cake, and dessert bar. It turned out beautiful even after a few stressful moments when we realized we had run out of fondant. But my wonderful sister Christie drove down from Memphis to bring us some and help with all the Alabama A's. Thank you mom and Christie for all your support and hard work in helping me get this delivered on time.

The wedding cake layers were strawberry, white, and Italian cream. It was iced in butter cream frosting with fresh flowers on top. As for the groom's cake and table it was all golf and Alabama themed! He chose a banana cake with cream cheese icing. We made sugar cookies, strawberry pecan coconut, and lemon mini pies, cake lollies, and petit fours.

The groom's mom did a wonderful job of decorating the table for the groom's cake and the dessert display. I love the candles with the golf balls and tee's in it.

Yes, these are real petite fours! Not what most people consider them to be. They are made from my petit four cake recipe out of my pastry chef book that mom has swiped! They are two to three layers depending upon size and have an apricot filling. I have made them with chocolate which is really good, but these were the normal ones. To top them off they have a layer of marzipan and are iced in a white chocolate glaze. Yummie! I had several while making them!

Cup Cake wedding!

This was a very cute wedding that my mom and I worked on for the last weekend in May. Instead of a large cake or dessert bar they chose different cupcakes.

The reception was held at the Big Truck Theatre in Taylor, Mississippi.
We made one big coconut cup cake for the bride and groom. The butterflies are made out of gum paste.

My favorite part was the names of each cup cake. We made snow white, Irish divinity, sugar baby's, summer breeze, and PMS special.
And If you're wondering how we transported that many cup cakes well this is how!

Bread!

So my mom is making bread for a new grocery store in down town Water Valley, Mississippi. Each day she makes 12 loaves of wheat, 8 loaves of white, 15 cookies, and 12 breakfast pastries of her choice. So for the past 2 weeks I have been working with her and helping with the orders. Here are some pictures of what all we made!

In the gift shop we displayed some of the bread and croutons for guests to purchase.

We made Italian, plain, and ranch flavored croutons. They were so yummie!

With some of the extra dough mom wanted to play around so she braided this loaf.

All the bread had to completely cool before being bagged, so it wouldn't get soggy from the steam.

We discovered that our wheat recipe had to be slashed on top not just to make it look nice but also to prevent a bubble from forming directly under the crust!

We made cinnamon rolls, scones, crescents, fruit pastries, and lots of bread and cookies! I ate fresh bread all week! It was so yummie!

Cakes and Pies Galore!

I spent the last 2 weeks at my mom's farm helping her with 2 weddings and her daily bread deliveries. Here are the desserts from one of the weddings. I will post the bread later and the other wedding as well.

I went to the farmer's market Saturday morning and lucked out on this bag full of fresh Blackberries for only 7 dollars! So I made the pie above for our family and I used some in one of the cakes below. They were so delicious!
This was the wedding cake for the Barn Dance reception held on the 5th at the farm. It was a 6 layer chocolate cake!

My mom and I combined our efforts to make all the desserts in the display so that it wasn't empty during the reception. Since she is shut down during the summer with the exception of special orders and events.

I had the cake in the fridge because our kitchen was so hot while the oven was running. So if you look close the cake started to sweat from the temperature change! It was 93 outside!

We made peach, blue berry, and chocolate cobbler for the guests to enjoy with a scoop of ice cream!

Below are close ups of the cakes in the display. I didn't have time to take pictures so I gave the camera to someone to take some for me. She did her best without opening the glass. Unfortunately there is a slight glare on a few. I need to get better about taking the pictures before putting them in the case!

I got the wonderful opportunity to help my sister this past week with her groom's cake. She hired someone else to make the wedding cake since we would be too busy with pictures during the time it needed to be delivered. And it was easier to move this one around without it getting damaged. I worked all day Tuesday baking the layers. They were flavored just like the candy, cherry, strawberry, lemon, and orange. Then on Wednesday we stacked and iced the huge thing. I then turned over the reigns to Christie and Jamie to finish and decorate. It turned out so great! Thank you so much Christie for letting me help make your day beautiful for you and Adam!

My mom and I worked this past year to get her kitchen set up to be a whole sale bakery. This is one of the products that we can now distribute throughout the USA! It's my pecan pie filling in a jar! All you have to do is add the eggs and butter and pour it into a pie shell to bake. I'm so excited to have this done. We had to make test jars and send them to a lady at Mississippi State University for testing. She made sure that it would be safe on a shelf for long periods. So if your interested we can now ship this to anywhere! We are now working on other cake or pastry mixes that you can purchase in the gift shop at her farm.

We made these for Easter at the farm they turned out great!

My mother and I have perfected petite-fores! She was determined to find the right recipe, so with a little work we did it. The ones below are 2 flavors first a simple fruit flavored one and then a almond chocolate one. Mom made the cake and helped with the layers I made the chocolate filling and decorated the tops.

I also made some chocolate almond truffles to use up some chocolate I had melted.

And finally another gift basket we made. This one had more savory items instead of sweets because the recipient was diabetic.

Fiddlin' Rooster Farm Bakery

Here are some of the Christmas orders we have been working on in the little red hen bakery at Fiddlin' rooster farm.

Gift basket:

This basket has lots of goodies in it. All of the baskets are made to order to fit each customer. This one was for a family that loved chocolate, so we made chocolate almond truffles, chocolate grasshopper cookies, chocolate pecan toffee, Russian tea cakes, spiced pecans, and muscadine cider. I hope they enjoyed all the treats!

These cupcakes were made for the nursing home in water valley. They were so much fun to make and turned out so cute! We actually got 3 more orders just like these for Christmas.
The cupcakes are vanilla and strawberry. We used fondant and a little butter cream icing to decorate.

Look close all of the snowmen look different! One even has indigestion from eating too much!

Cotton Gin Cake

Mom and I made this cake on Friday for a little boy's birthday. He was celebrating his birthday in a cotton field, so we themed the cake around cotton. When he looked at the cake he said,"Ooh it's cotton and a trailer and bails, where is the tractor?" His mother told us that last year the cake had a john deer on it!

I took this picture before we decided on one final detail. So the finished cake had grass around the barn. I will try and get a better picture of it posted later.

I finally took some pictures of the items I have made in the bakery. I quickly grabbed my camera the other day and took a few pictures before anyone walked up. Unfortunately it's not everything. I keep forgetting to take pictures of stuff and then it sells before I can. So I will try to be better about it and I hope you enjoy the pictures below.

Crescents and Chocolate Crescents

These tarts are filled with the same caramel I use on my apples and then have a layer of chocolate ganache poured on top.
Good old fashioned Chocolate chip cookies!

These are the newest recipe we have been making. They are a type of oatmeal cookie that tastes nothing like an oatmeal cookie! They have chocolate, pecans, and craisens inside this soft cookie!

For Fall we have been making candy apples!

And Yummy caramel Apples with or without Oreo cookie crumbs!

What would fall be like without some Caramel popcorn?

The cutest thing I have been making in the bakery is the worm bucket! How cute is this! When you purchase them you get to keep the little bucket and enjoy the dirt dessert inside!

I have been working for my mom for the past month at her farm. She opened a learning farm with a gift shop, corn maze, educational activities, and a bakery! Since we opened in September we have gotten a few special orders for cakes and bread. This was a birthday cake my mom made. It is an Italian cream cake for a 98 year old's birthday!

I made sure to take my mom's picture too! She hasn't gotten to bake much since opening, but was able to sneak in for a little while to make this cake while I made bread.

Almond cake!

After watching the recent movie Julie & Julia my mom went out and bought Julia Child's cook book Mastering the Art of French Cooking! It is amazing! I can't believe we didn't have it before now. We have so many cook books, but we didn't have hers! So I wanted to make the cake featured in the movie, because it looked delicious! I have to say for my first ever Julia recipe it went great! The only thing I found that I need to change is the cooking time. I followed all of the directions to a t. I even whipped the egg whites by hand, something I have never done! Today's technology has prevented us from learning a lot of basic abilities and arm strength! The cake tasted great and had a wonderful flavor to it. I just need to watch the time. It was a little dry around the edges. The icing was so simple I think I didn't whip it long enough. That or it was just to warm during transportation to my mom's. (yes I had to share it with her since she bought the book) She was very surprised! The icing was really soft, so next time I will whip a little longer. All in All I congratulate Julia! I have always been a fan, but now I appreciate her a lot more! Yummy Yummy! Bon Appetite!

Wedding

Hanna Baskin's wedding:

I finally took the pictures off my camera and found these. This wedding was a few weeks ago in New Albany, MS. I only got a few pictures, but I think the whole wedding turned out great.

This is the fruit and vegetable display.

We had 2 tables that look just like this one, the only difference is the other one had shrimp on it instead of the spinach dip.
I made 2 cheese balls. One was savory with pecans on the outside and this one which had craisens and almonds.

I think the wedding was beautiful and hope that they all enjoyed every bite!

Baby Blessing cake for the Britt's

Well it has taken me too long to post these pictures. I have had a few day's off work but I just haven't touched the blog until today. I made this cake for a friend who was blessing her twins at church. She had family in town and wanted something special for them. The cake is a lemon cake with lemon butter cream icing. I decided to decorate it in the colors she used in her nursery. The fun part that I found out after making the cake is that each boy has a blanket in there color just like the teddy bears are holding. I am so glad they had me make this cake for such a special occasion.

I sprinkled the tops of the cake with sanding sugar to add a little bit to the flat off white color.

Each teddy bear is made out of fondant and then painted to look more real.
I'm sad that the pictures came out so fuzzy the blankets were scored to look like a quilt.

Aiden's birthday cake!

Happy Birthday Aiden!

Every now and then I get to work on a cake with my sisters. This one was for my nephew Aiden who turned 7 this past week. He had a sponge bob themed birthday party. Usually his mom, my sister Jamie, makes all of there cakes (you can see her work herehttp://southernsweetcakes.blogspot.com/). Unfortunately she was sick and couldn't touch anything in the kitchen Christie my talented younger sister made the cake and while she did that I made sponge bob and his friend Patrick. Christie also has a site to show her work here http://christiescakes.blogspot.com/. I wish we lived closer so we could open a shop together. We are kind of like Ace of cakes in the aspect that we each excel in different areas of the pastry world. When we combine our talents we create these wonderful edible creations.

I made sponge bob out of fondant and gum paste.
Patrick was fun because he looked the most like himself! We kept imitating his voice saying, "Hey Sponge bob!" And then we would dance him around the counter.

I can't wait to make another cake with the girls it's so much fun!

Taylor Grocery Meet and Greet!

On July 14th we held a meet and greet reception at The Taylor Grocery restaurant. It was to share with some of the event planners in oxford some of the new things we are doing. Most people associate Taylor Grocery with catfish only; however, we do much more!

This is me with my mom Rhonda Webb. She helped me with the groom's cake and took all the pictures that night. We made the groom's cake look like the ole miss football stadium.
Here the owner, catering manager, and myself are getting our picture taken for the Oxford Invitation magazine!

I think the cake turned out great!

The theme was rustic to match the store and we used chocolate brown and yellow linens with sunflowers for decorations. So I decided to design the wedding cake around that theme.

I used a chocolate fondant to cover the cake and piped on some sunflowers. The ribbon is made out of fondant that is painted with a sunflower orange edible powder.

I made the fruit arrangement with grapes, blueberries, and strawberries.

We served pecan tassies, and fruit cups as some of the desserts.

These are key lime tassies.

We also served hors d'oeuvres.

These are our chicken salad cucumber bites and tomato salad cups.

My pictures are a little out of order. Here are some more desserts. We made chocolate bites, some in white chocolate and some in milk.

I'm a little sad the some of the pictures looked great on the camera but when we put them on the computer they were fuzzy. I had to include some though because I still think they look OK even with the fuzz.

Everyone raved over my fruit dip garnished with some fresh mint from my mom's garden.

We served this raspberry lemon punch for our non alcohol guests such as myself.

All in all I think it was a great evening and we have gotten a few events from it, so I think it was well worth the work. For those who came or helped in anyway thank you so much. And I hope all those who missed out can book there next event with us and enjoy some of the same wonderful food!

4th of July Trifle

I helped my mom make this trifle for dessert Saturday! It was so yummy! The great part about it was how light it was, you don't feel like you have eaten a heavy dessert. It had a white cake layered between whipped cream, strawberries and fresh blueberries from her farm. This dessert is so easy to make in any size. You just have to find a glass or bowl. You can make it individual in goblets or large like this one in a trifle dish.

Tip Of the day!

Ok so I was thinking about my blog and I know I use this as a site to show customers different cakes and desserts I have made. However, I have decided I need to share a little knowledge along the way. So whenever I get the chance I will give a little tidbit of decorating knowledge from my vaulted brain. And yes my brain is a vault. I guard my recipes and a lot of how I do things, because this is my career and I don't want people to think it's so easy I don't need to pay her! I have put a lot of time, money, and practice into what I do to make it better. And a lot of love! So with that being said, I'm going to try and share my gift of cake decorating and desserts with whomever is interested. Please use my knowledge don't abuse it and hopefully you can gain a little from my tips.

Today I decorated this 2 layer cake with butter cream icing. I wanted it to be a little different from what I normally do. Let's face it birthday cakes tend to look the same! Same shell border, flowers, and greeting. The only difference is the shape and color. I decided to make the border have 2 colors. The way to do this is really simple. Take your decorating bag with tip attached. Use a butter knife or flat edge spatula(one that is skinny) and spread a single line of the darker colored icing into the bag. Make sure to only put about butter knife width line no more. Then fill the rest of the bag with the lighter color as normal. Remember too much icing in the bag will make it harder to handle and harder on your hand. Practice a few times on the counter or onto a plate squeezing out the desired shape. If done correctly the colors will come out at the same time giving a border that looks like the trim below. Have fun and good luck decorating!

A simple cake for Chris!

Chris's mom ordered this cake for him. He just came back from Iraq and he also recently graduated, so they gave him a party for both. This cake is a white cake with butter cream icing and fondant ornaments on top. I painted the flag, ribbon, scroll, and hat with luster dust and edible ink. It's hard to tell but the flag has a slight shimmer to it.

NAUIAB luncheon

I made this cake for a large meeting last Monday. I had no idea what the group was, they just sent me the logo. It was a fun cake to make. It's just a simple white sheet cake with butter cream icing. But what made it great was the gum paste magnolia. It was a leftover flower from a previous cake. I remembered that I had saved it and thought it would be great to use. I could have made one out of butter cream, but it wouldn't have had the same look! The ribbon is the only other part that isn't icing. I made it with fondant and then dusted on copper and gold luster dust. They took a professional picture with Judge Graves making the first cut. I can't wait till they get me a copy. Banquet's for MSMA

This past weekend we had a Friday, Saturday, Sunday event for the MSMA at the Oxford conference center. We served breakfast, lunch, and dinner each day for 2oo people along with a few small events in between those times. I have a few pictures of the desserts Me and my crew made. I ran a kitchen with about 10 people or more. I did most of the baking Wednesday and Thursday with my mom and sister Christie. And then all the finale details (cutting, icing, plating, etc...) the day of the event with the kitchen and serving staff. It was so much fun and I'm so grateful for all the help! I hope everyone enjoyed it as much as I did. I don't have pictures of everything, but as soon as I get the ones butch took I will post them.

Gourmet cheese cake with strawberries and whip cream,

we served this Saturday night and one lunch that afternoon.

This was the breakfast buffet we set up each morning. It had blueberry muffins, apple cinnamon muffins, banana bread, cinnamon rolls, fresh fruit, 3 types of danishes (of which Christie made), bagels, biscuits, sausage, bacon, and gravy.

This was the dessert buffet served Friday afternoon. It included: German chocolate cake, strawberry cake, caramel cake, coconut meringue pie, chocolate meringue pie, and apple pie. The lady that ran the entire event collects glass cake stands and brought several of hers to display the desserts on. It was so pretty! This picture just doesn't do it justice.

Here I am making a face at one of the servers! I finally had an excuse to wear my new chef coat!

The strawberry cake was so moist that it began to fall. We had to plate one whole cake

German chocolate cake! My favorite, I'm such a chocoholic!

The inside and top have the German icing. And the outside is iced in a rich chocolate icing.

The coconut and chocolate pie look very similar. The only difference is the coconut on top and the chocolate chips on the other! You can see the caramel cake in the back of this picture. I didn't have a recipe for the icing. I had to make one up that morning. It actually turned out great!

I wish I had more pictures to show now. Unfortunately I spent most of my time in the kitchen and had to get someone else to take the few that I got.

The past few weeks have been really busy and I went out of town and couldn't update anything I had made. So here are a few of the things I have been working on the last 2 weeks.

My mom's birthday cake!

My sister Christie and I made this cake for my mom's birthday which was yesterday. It's a chocolate cake with a chocolate moose filling and butter cream icing. The kettle is wrapped in fondant and then we painted it a copper color. My mom has a garden with sections for each plant that are shaped very similar to this

His mother sent us the info of her son. She said he loved baseball and had a list of achievements received while in school. The one's I listed on the scroll are his favorite.

I haven't made any new desserts lately just lots of chocolate chip cookies and brownies, so I looked back and found some pictures I took a while back. I went through this muffin madness. I was craving muffins and decided to perfect a few of my recipes. I made a blueberry muffin with a lime glaze and a chocolate chocolate chip muffin. They were so yummy! The blueberry ones where so good that when I made them I ate 5 in one sitting. It ended up being my dinner that night. I went through about 3 different batches on various night till I finally got the perfect recipe. I ended up sharing a lot of the muffins with friends and family. I hope you all enjoyed them.

Easter Cupcakes

My mom and I made these cupcakes for our church Easter party. She had seen the idea and wanted to try it out. I think they are so cute! The cupcakes are white cake and chocolate chip white cake. The frosting is a fluffy butter cream. We used coconut, marshmallows, jelly beans, and M&M's for decoration. They are in two sizes mini and regular.

Ooey Gooey Brownies

I made these yummy brownies for the Ole Miss football coaches yesterday. We decided they needed a different treat. We have been making them cakes and cookies, but they deserved something new.

Ole Miss Football ...Unsatisfied!

The faculty spent a day with the football team and ended there evening with a dinner in the indoor practice facility. I made 2 sheet cakes with a football on top. The cake is covered with butter cream icing and the football has chocolate fondant on it. They let us introduce the new theme on the cake. They are unsatisfied with last year's accomplishments and want to do better! Well, I hope they do better! Hotty Toddy!

If anyone is interested I can put the football on any cake or by itself.

Easter sugar cookies

These cookies look red, but they are actually a hot pink color. They have silver pearl eyes and a light dusting of glitter on top.

These are some really cute rice crispie treats My mom made this weekend for the grand kids. I liked the idea so I had to share.

Ole Miss Football Cake!

The Ole Miss Football team started there spring training today. So I got to make a cake for them! I Think the cotton balls in the corners make it look great! This is a full sheet cake that serves about 48-50 people, more if you cut tiny pieces. 50.00

Sugar Cookie's for the Pi Beta Phi Sorority

I made some sugar cookies yesterday for a lady whose daughter is in the Pi Beta Phi sorority. I think they turned out great. I had a few extra so I put hearts and flowers on them and gave them as samples for all the wonderful ladies at Internal Medicine. I was able to play with my new sanding sugars. I bought them with the gift certificate my sister Christie gave me for my birthday to fancy Flours. It made each cookie sparkle so nicely.

Each cookie is 1.25 and placed in a cake box. If you want them individually wrapped and tied with a ribbon they are 2.00 a piece.

Bridal Show

Bridal Show in Tupelo, MS.

This has been a busy weekend. I helped work a bridal show in Tupelo Mississippi on Sunday. It was so much fun, but a lot of work getting ready for it. I made the two cakes for display and used gum paste for the flowers. We served some chocolate dipped cake balls, white cake with butter cream icing, shrimp and sausage cheesecake bites, sausage and cheese, and a fruit and cheese display. There are so many people who have eaten at Taylor Grocery but had no idea that they cater! So I hope it got us some good business. Enjoy the pictures!

German Chocolate Cake

This cake is a 2 layer chocolate cake with German chocolate icing. I have chocolate shavings on the sides and the top is decorated with a chocolate ganache icing. $25.00 for a 2 layer and $35 for a 3 layer.

This cake is a 2 layer round 9 inch white cake with a fluffy vanilla butter cream icing. This icing recipe is really delicious. My sister gave me the recipe. It is so soft that you have to fluff it on the cake, because it won't smooth easily. The flowers are made of gum paste. $25.00

Baby Shower

This is a single layer 9x13 white cake with a fluffy strawberry butter cream icing. It has gum past flowers on the corners and the monogram is made with white and chocolate fondant. $30.00

My Birthday Cake!

I know my birthday isn't until next week; however I had extra batter from another cake and decided to go ahead and make this one. I have wanted to make this design for a while now. And finally I had an excuse. It is a chocolate 2 layer heart shaped cake. I filled it with a strawberry cream cheese icing and then covered it in white and chocolate fondant. I'm not sure if I like it better with or without the bow. This cake would cost $35.00.

A birthday cake for a young girl!

I like to make cakes designed specifically for each person. This one was made for a girl named meg. She wanted a chocolate cake with strawberry icing. And she wanted it decorated with daisies, a purple bow, and orange writing. I think it turned out pretty cute and I hope she has a wonderful birthday!

This is a 10 inch square chocolate cake with strawberry cream cheese icing. The bows and tag are made of sugar paste. $30.00

Wall-E is a fondant covered cake for my son's birthday. He loves that movie so I made the cake for the family and the cupcakes with eva on top for his day care.
